The glycemic index measures how quickly a food raises blood sugar after you eat it. Foods with a GI of 55 and above raise blood sugar fast, which is a problem for diabetics. T2G Coco Sugar has a tested GI of 35, which is well below that threshold. That is not a claim we added to make it sound healthier. It is a number from a lab.
Coco sugar is minimally processed, which means it retains the natural minerals, vitamins, and amino acids from the coconut sap. The low GI of 35 means it is digested more slowly and does not spike blood sugar the way refined sugar does. It also has a richer, slightly caramel flavor that works well in coffee, baked goods, and sauces.
They come from different plants. Coconut sugar is made from coconut sap. Muscovado is made from sugar cane. Both are less refined than white sugar, but coconut sugar retains more naturally occurring nutrients and has a significantly lower glycemic index than muscovado.
Agave syrup comes from the agave cactus and is refined to a high-fructose liquid. High fructose consumption puts a load on the liver and can affect metabolic health over time. Coconut sap syrup is lower in fructose, comes from a whole-food source, and is less processed. If you are choosing between the two, coco syrup is the better option for most people.
Regular coconut oil is refined, bleached, and deodorized using solvents. That process strips out most of the natural flavor, aroma, and nutrients. Virgin coconut oil is pressed from fresh coconut meat without heat or chemicals, so the MCTs, antioxidants, and natural coconut character are all still there.
